Labu musim dingin adalah sebuah buah tahunan yang mewakili beberapa spesies labu dalam genus Cucurbita. Buah tersebut berbeda dengan yang dipanen dan disantap pada tahap buah dewasa saat benuh-benuh sepenuhnya dewasa dan ulitnya mengeras. Pada tahap ini, kebanyakan varietas buah tersebut dapat disimpan untuk dipakai pada musim dingin.
